How good is this fresh and healthy white bean salad? Made with only a few ingredients this salad is quick and easy to whip up. And once you dig into the bowl of this scrumptious and juicy salad, it's really hard to stop!
Beans are a great source of proteins, vitamins and fiber. They provide your body essential nutrients especially if you are following a specific diet like gluten free or vegan. You can use canned white beans if you don't have enough time to boil them. I always boil fresh beans because I am not a huge fan of canned, tinned or frozen products. For me it's about choosing the best and fresh produce that brings out the flavor and texture in your cooking.
Choose your favorite vegetables to go with this delightful salad and if you want something more than just a salad, top it with lemon, chaat masala, papri and plum chutney to make a lobia chaat. Some of us just can't survive without some masala in their food. That's the thing with our desi cooking. Do tell me how you usually make a bean salad?
Cooking time: 2-3 hours
- 250 g white beans
- 2 onions chopped
- 2 tomatoes chopped
- 2 medium sized potatoes boiled and cut in cubes
- 2 tablespoons lemon juice
- Fresh coriander chopped
- Salt and pepper for seasoning
Soak the white beans for 30 minutes and rinse. Boil them for 2-3 hours or until they are cooked properly. Mix white beans and all the other ingredients in a salad bowl. Taste for the seasoning. Enjoy!
